Favourite Pantry Staple Recipes

Based on current events, I’m compiling a list of some favourite recipes my family uses that are simple and mostly use pantry supplies.

Here are the recipes that I have linked to their original sources. Clicking on the photo will take you to the full recipe. The soups use mainly use lentils or canned tomato and the baking uses very little oil/dairy ingredients.

Please share your favourite simple pantry recipes so we can all have more ideas to use what we have!

 

Lentil Soup Recipe – Cookie and Kate

This soup recipe by Cookie and Kate is so good!! My mum shared it with me and it really is the best.

This simple soup uses basic pantry ingredients and has tons of flavour. Using a hand blender to mix up about half of the soup improves the consistency. Substitute the carrots and green vegetables for anything you have or leave out if you don’t have any.

-1 can tomato, onion, lentils (I think it’s better with red lentils), curry powder

-Canned Tomato, tomato paste, lentils

This soup is very basic in terms of ingredients and has good flavour, especially with hot sauce and bread.

Coconut Milk Scones – Sweet Sugar Bean

My sister introduced me to this recipe years ago. I make it often because it’s quick and only uses a few ingredients. I have adapted the original recipe by doubling it and using one can of coconut milk (instead of coconut oil).

1 can of coconut milk, baking powder, frozen fruit, flour/oats

My version: 3 cups flour, 1/2 c oats, 4 Tbsp baking powder, 1/2 tsp salt, 1 can coconut milk, 1 cup or more of frozen fruit. Bake at 375 Degrees approx 20 min.

Oil Free Zucchini Muffins – Oh She Glows

No eggs, oil or dairy necessary if you don’t have them. Substitute pureed frozen butternut squash, mashed carrots, applesauce, canned pumpkin instead of the zucchini.

-flax egg, buttermilk (soy milk with vinegar or regular milk with vinegar)

Salmon Cakes – Natasha’s Kitchen

Take one can of salmon and turn it into 4 burger patties (could extend with red lentils to create more).

-1 can of salmon, 1 egg

These burger patties are quite good and better with toppings if you have them.

-Red Lentils, 1 egg, bread crumbs, onion

We also regularly have dried beans which once cooked make tons of meals. Soak with boiling water the night before and allow 2-3 hours of simmering. Puree about half the mixture with a hand blender once they’re cooked in the pot and use chicken/vegetable stock and chili powder for some flavour.

 

Pea soup also makes lots of meals and requires very few ingredients.
